Tête de Moine AOP - which translates as "monks head" - is cylindrical semi-hard cheese with a smeared rind. Due to ist fine texture, it is not cut but shaved into delicate rosettes with a blade held at right angles to the surface. Tête de Moine melts easily in the mouth.
